Pepper: Let’s be honest. Pre-ground black pepper tastes like cardboard. Grind your own fresh in a pepper mill if you can. Whole Foods has the cheapest spices in little clear plastic containers. It's worth the extra trip to save up to $3-5 per spice. Or you can get a non-refillable pepper mill at Wal-Mart in the spice aisle... but you'll pay more in the long run if you use a lot of pepper. There are dozens of varieties of peppercorns. I love plain black peppercorns or white peppercorns for an extra bite. Many agree the crème de la crème of peppercorns is the Tellicherry. You can find these at specialty spice markets like Penzey’s Spices in Inverness Corners off Highway 280. You can use as much pepper as you want with no health side effects. And please, I beg you, throw the ground up stuff away!

I personally love to experiment with different salts and peppers, but first, I feel it’s necessary to talk about cooking without experimentation.
That is why our next topic will be: recipes.
