Basic Tomato Soup
Yield: Makes 4 servings
Active Time: 30 minutes
4 pounds heirloom tomatoes - blanched and peeled
1/2 cup carrot diced
1/2 cup white onion-diced
1/2 cup celery-diced
12 ounce beef stock (or vegetable if you prefer)
salt and pepper to taste
Sweat mirepoix in oil until tender and translucent
Add tomatoes and simmer 2 minutes
Add stock and bring to boil
Skim anything on top
Hit with a stick blender and cook to desired consistency
Can be served hot or cold
