Pan Fried Sweet Potato Latkes with Applesauce

Ingredients
8 C Sweet potatoes, mashed
4 ea Eggs, lightly beaten
2 ½ C AP Flour
¼ C Yellow onion, grated
½ C Chives, fresh, minced
As needed Salt and freshly ground black pepper
As needed Vegetable oil
As needed Sour cream
Method
Stir together mashed sweet potatoes, eggs, flour, onion and chives. Season as needed with salt and pepper
Pan-fry sweet potato mixture in approximate 2 T portions, in hot oil. Flatten with a fork to approximately 3” rounds.
Cook until golden brown on each side; drain on paper towels. Add more oil to skillet as needed as you repeat the process.
Serve with fresh applesauce and sour cream
Fresh Applesauce
Yield: 2 qts
Ingredients
5 # McIntosh apples, stemmed, cored, coarsely chopped
½ C Sugar
1 ½ T Lemon juice, fresh
2 ½ tsp Cinnamon, ground
3 oz Water (apple juice or apple cider may be substituted)
Method
Combine the apples, cinnamon, sugar and water and bring to a boil. Simmer, stirring occasionally for 20 minutes.
When the apples and tender and the mixture is the consistency of a chunky puree pass the apples through a food mill and return to the heat.
Simmer for an additional 5-10 minutes or until thickened.
Adjust seasoning with additional lemon juice, sugar or cinnamon.
