Parmesan Chicken w/Creamy Sage Sauce
Preheat oven to 350 degrees.
2. Spray 9 x 13 pan with non-stick coating and arrange 6 chicken breasts in single layer in pan.
3. In mixing bowl, combine:
1 cup shredded Parmesan cheese
½ cup panko crumbs
½ cup breadcrumbs
¼ cup melted butter and ¼ cup canola oil (mixed)
1 tablespoon minced garlic
2 teaspoons dried parsley
1 teaspoon seasoned salt (optional)
½ teaspoon black pepper
4. Spread topping over chicken.
5. Bake for 35-45 minutes or until done (165 degrees).
6. While chicken cooks mix together in a sauce pan:
1 cup white béchamel (basic roux) sauce
¼ cup chicken broth
¼ cup water
¼ cup white wine
¼ cup melted butter (optional)
1 teaspoon rubbed sage
½ teaspoon kosher salt (optional)
½ teaspoon black pepper
7. Heat sauce slowly and let simmer for 5 minutes. Pour over cooked chicken breasts and serve!
OPTIONAL: Prepare rice or pasta and pour sauce over it instead of over chicken.
