Grilled Chicken Skewers Marinated in Vidalia Onion and Fresh Thyme -Infused Yogurt
Served with warm mini pita breads and a crisp Greek Salad!

Ingredients
1 ea Vidalia onion, chopped
4 ea Garlic, minced
¼ C Lemon juice, fresh
1 T Paprika
½ tsp Cayenne pepper
½ tsp Freshly ground black pepper
1 T Thyme, fresh, leaves chopped
1 C Plain yogurt
1 ½ # Chicken breasts or thighs, boneless / skinless, cut into large pieces
As needed Olive oil
As needed Salt and freshly ground black pepper
Method
Combine the onion, garlic, lemon juice, paprika, cayenne, black pepper and thyme in a food processor or blender. Using rapid pulses, combine until well blended. Add yogurt and blend to combine.
Using a non-aluminum container, combine the chicken and the yogurt onion marinade, coating the chicken well. Marinate under refrigeration for about 8 hours.
Remove the pieces from the marinade and thread your skewers; season with salt and pepper. Brush the grill lightly with olive oil.
Grill until cooked through. Also great broiled or roasted!
