Fresh Cranberry Relish
Yield: 1 ½ qt
Ingredients
2# Cranberries, fresh, picked over
1 qt Granulated sugar
1 C Water
2/3 C Orange juice, fresh
Method
Place all ingredients in an uncovered skillet and cook for 7-10 minutes, until most of the cranberries are popped open and the mixture is somewhat thickened. Skim and discard any foam that rises to the surface.
Let the relish cool and then serve, or refrigerate for up to one day.
