Village Tavern's Asian Barbecue Ribs

ASIAN BARBECUE RIBS
Serves 3-4

INGREDIENTS

2 Each Baby Back Ribs, (1 lb –1 ½ lbs each) score the back

1 Cup Sugar, granulated
1 1/3 Cup Water
½ Cup White Vinegar

½ Cup Soy Sauce
1 Tablespoon Garlic, chopped
1 teaspoon Black Peppercorns

PROCEDURE

1. Pre-heat oven at 350 F.
2. In a large pot (large enough to fit the ribs) over medium heat, add sugar and caramelize. Once the sugar melts, you can stir with it with a heat proof spatula to dissolve the sugar and evenly melt it.
3. Once all the sugar is caramelized and melted, add the water. The sugar will solidify, turn the heat up to high and stir the solids until it is completely dissolved.
4. Add the vinegar, soy sauce, garlic and black peppercorns. Bring it to a boil.
5. Add the ribs and continue to boil until you do no smell the vinegar anymore around 7 – 10 minutes.
6. Arrange the ribs in a hotel (baking) pan and pour sauce over it. Cover with plastic wrap and foil and cook for 1 hour and 10 minutes.
7. Take the ribs out and place it on a cutting board and slice it. Place on a serving platter.
8. Strain the sauce in a fine strainer and serve with the ribs.
9. You may garnish the ribs with sesame seeds.
