MUSTARD PEPPER BURGER
Serves 1
INGREDIENTS
8 oz. wt. Ground Chuck, marinated
¼ teaspoon Cracked Peppercorns
4 Tablespoon Butter, unsalted, melted
1 Each Sesame/Wheat Bun
1 Tablespoon Dijon Mustard
1 Each Leaf Lettuce
1 Each Tomato, Sliced ½ ”
1 Each Red Onion, Sliced 1/2”
1 Each Pickle Wedge
1 Tablespoon Mustard-Pepper Marinade (Recipe Follows)
¼ teaspoon Cracked Peppercorns
PROCEDURE
1. Place burger on grill and add cracked peppercorns.
2. Cook burger to proper temperature.
3. Butter both halves of the bun and place it on the grill and toast evenly.
4. When burger has reached desired doneness, remove from grill. Brush with Mustard-Pepper Marinade and add cracked peppercorns. Then place burger on bottom half of the bun.
5. Add Dijon Mustard to top and bottom of bun. Then add lettuce, tomato and onion.
6. Place the burger on a large round plate. Garnish with a pickle wedge at 4 o’clock
MUSTARD-PEPPER MARINADE
INGREDIENTS
¾ Cup Soy Sauce
1 ¾ Cup Worcestershire Sauce
¾ Cup Dijon Mustard
2 Tablespoon Cracked Black Pepper
PROCEDURE
1. Place all the ingredients in a stainless mixing bowl and mix thoroughly with a wire whip.
2. Pour the marinade into a container and store in the refrigerator. Shake well before using.
